Oatmeal & Almond Flour Pancakes with Maple Syrup Yogurt and Strawberries

Birthday pancakes for the birthday boy!  I made these a few weekends ago for Calum's 1st birthday weekend.  I usually use this Oatmeal Pancake recipe but after making these cookies with almond flour / almond meal / ground almonds, I'm a convert.

These pancakes are healthy, light, spongy and delicious.  Especially with some yogurt mixed with maple syrup and fresh strawberries, yum!

"Beep! Beep!  Coming through - I've got pancakes to eat!!"


I now grind oatmeal before making pancakes since if I don't wait long enough and leave the oats whole, they are kind of raw and not easy to eat.  The wheat germ was an after thought.  I added a few tablespoons, but you don't have to.

The batter is a little runny when you first mix it.  Let it sit for 15 minutes or so to let the oatmeal absorb some liquid and firm up to make a better batter consistency.

I didn't feel like I should give Calum straight maple syrup so adding yogurt gave the syrup a healthier spin...

Oatmeal & Almond Flour Pancakes

1 cup oats
1 1/2 c almond meal
1 tsp baking soda
1 tsp salt
3 tbsp sugar
1 - 2 tbsp wheat germ (optional)
1/4 melted coconut oil
1 1/2 cup almond milk
2 eggs, whisked


Grind your oats and then mix with all dry ingredients.  Melt the coconut oil and let cool slightly, then ad to dry ingredients.  Next add your milk (regular milk is fine too).  And if the batter is cool enough so far add your eggs and mix it up!  Let the batter sit for 15 minutes to thicken.

When you're ready to start cooking, heat a skillet and melt some butter on it before pouring about 1/3 cup of batter on.  Once the pancake is bubbly, flip and let cook the rest of the way (a few minutes).  Serve hot with maple syrup mixed in plain yogurt and fresh strawberries like we did - or keep it simple and stick with warm maple syrup and hopefully more butter.

Women's March {Ann Arbor}

It has been about two months since the Women's March but here I am, finally posting our photos from the day.

I debated going all week, since I had a massage scheduled with a woman that takes a month to get an appointment with -- she's seriously THE BEST.  But the ridiculousness of my dilemma got the best of me.  A massage?  Charlie, come on.  Get over yourself.  My desire to participate, and perhaps some guilt, made me finally, with about 48 hours until the march, commit to going.

Like many, this past election cycle was the beginning of an interest in politics for me.  The main reasons I didn't get involved or talk about politics in the past is because (1) there was so much I didn't understand that I felt too overwhelmed to learn since I was figuring my own life out, I didn't have time; (2) my participation didn't feel like it would make a difference, so why bother, and (3) I was sure the politicians know the right thing to do, they are more informed than I could hope to be, and I'm sure they will do a good job, right? ....Right?

WHOA, WHOA, WHOA!  How wrong was I?  Now that I've taken the time to learn the things that have plagued me for years....Khan Academy, American Civics, for the win (click here if you have no idea what Khan Academy is!)....I feel compelled to participate.  Also, when I realize that I don't know something about something I'm interested in, I'll try to do some reading to get up to speed, or at least learn enough to be able to have a discussion with someone else.  Educating myself has been key to conversing about issues that are important to me because trying to make a point based on my feelings won't get me (or anyone) very far.

My point of writing this post is for two reasons.  I wanted to share my photos from the Women's March because the signs were outstanding, the colors and the day was beautiful, I'm still kind of amped up from going and, finally, more importantly, if you haven't been very interested in politics in the past, I hope you get involved now too.  Speak up.  Form your opinions, do your research, talk about issues that are important to you, be willing to talk about issues that are important to others, be heard.  It is our duty.

Sure, I still feel somewhat insignificant but I hold on to the principle that the whole is more than the some of its parts.  Obviously, if everyone does their part to be involved, it can make a difference.

I like the summary sign on the left.  Difficult to read but it has the golden rule all over it:  Women's rights are human rights, Science is Real, Black Lives Matter, Love is Love, Diversity is celebrated.  Yes. Yes. Yes. Yes. Yes.

One of my favorite messages:  my body, my choice.  I'm not sure I can understand an argument otherwise.

Miss Kim, 327 Braun Court and The Last Word {Ann Arbor}

To recover from a dreary Friday day, we had a very exciting date night planned with Ariel and James!  Andy and I put on our "uniforms" and headed downtown to hopefully snag a table at the new Korean restaurant in Kerrytown called Miss Kim.

As you can see we got lucky!  Manhattans for the boys and me and the Bees Knees for Ariellie...

We are all look so happy to be out (and we were)!  We don't get out much these days haha

Food that we didn't have to cook ourselves!  And DELICIOUS!

This is the "uniform".  I've only gone out like 3 times in the last 3 months so I bought this jumpsuit with booties for the season instead of a dress with heels because I can't handle being uncomfortable (difficulty walking, cold, skirt riding up, etc) if I have the option not to.  #momlife

Ariel and I got dessert at The Bar at 327 Braun Court, in the form of White Russian (not pictured).  James' date night beer and a shot (vague). and Andy stuck with manhattan.

Then we trekked over to the Last Word.  More pictures!  With Flash!  My fav...not.

We got into bed, already hungover, around 1am.

And Calum woke up at 3am...reminding me of why I try not to have too much fun, I pay for it later!  Or right away in this case haha.  Calum can giveth and he can taketh away.

Easy weeknight meals

NYE 2017:  a baby sleeps, mis-matching pajamas, a mediocre frozen Whole Foods confetti cake that I bought because sprinkles, delicious Michigan-made Sex brut rose, cat crashing (or enhancing) our selfie taken with my new selfie stick and watching the end of Die Hard that we started a week earlier.  Bed by 10pm.

A leftover, hodge-podgey post as my first of 2017.  A year ago, this wouldn't make sense to me.  In fact, it still doesn't make sense.  But since it takes me forever to write and finish a post and my last post was over three months ago, I'll call this progress and that makes me happy :)

I used to have time for meals that took a fair amount of time to prepare.  This Vietnamese Noodle Soup took me all afternoon.  My real buttermilk biscuits require me to have biscuity hands for at least an hour.  And remember when I used to make my own pizza??

I was pretty confident we would find a way to still cook dinners at home even though our evens consist of picking up the babe, tubby time, walk with the babe, play with babe, read to babe and nurse babe to sleep.  Re:  the amount of time we have for dinner is minimal.  I'd say under 1 hour.  It used to take me an hour to cook then we would sit and enjoy it slowly with wine or watching one of our shows (now it takes us 2 to 3 nights to get through one episode of Breaking Bad).

We ordered our fair share of take out food but we're finally getting back to the point where a $15 chicken caesar salad from Roadhouse no longer sounds appealing.

I've been thinking I wanted to post some of our easy weeknight dinners so I can use it as a guide when I'm at a loss for what to make.  This post from Cupcakes and Cashmere inspired me to finally post a few of our favorites lately.

Sautéed Veggie and Parmesan Sandwich with Baked Sweet Potato

Cold Smoked Salmon and Goat Cheese on an Everything Bagel

(with a Tomato, Cucumber, Red Onion and Basil Salad)

I wrote this post a few months ago (August 2016, maybe?) and even revisiting and actually posting has been a good reminder of a few meals that work in a pinch.  I even left this note for myself:

"A recent meal we've made and enjoyed for three dinners was ground pork and ground turkey burgers (mixed with pre-minced garlic)"

Now I sort of remember, we made burger patties, had burgers for one meal, cut them up and ate them as meatballs for another and I can't recall the third meal :)  Oh well, dinner things have a way of working themselves out.  Last night we had leftover veggie tofu stir fry and since there wasn't enough to fill us up, I chopped a thin pork chop seasoned with cumin, paprika, salt and chili powder, cooked them in a diced onion and a splash of water.  At the end, I threw some already roasted butternut squash to warm it up and served it in leftover corn taco shells, dolloped some plain yogurt and a diced tomato.  Pork tacos, people.
