Homemade Basil Pesto

A homemade basil pesto is one of those recipes that you need to know how to make.

It goes with almost everything, is a guaranteed crowd-pleaser and is deliciously easy to whip up a batch!

Just give your basil a little rinse...

A little snip...

Gather up the usual suspects, easily on hand...

Blast them in the food processor...

And out comes a beautiful, fragrant green spread, ready to decorate your toast, pasta or chicken...

Homemade Basil Pesto


2 cups packed basil
1 clove of garlic (add a second clove if you like garlicky pesto!)
1/2 to 3/4 cup grated Parmesan
5-6 tbsp olive oil
1/4 c pine nuts
1/2 tsp pepper
Salt to taste


Pack all ingredients, except salt, into a food processor and blast it until everything is combined.  Use a spatula to push everything down into the mix, give it a taste...sprinkle in a little salt and blast it again!

Using your spatula scoop into a container and top with another tiny dusting of salt.  Serve now or store up to 3 days.  If it looks a bit dark after a few days I give it a drop of olive oil and a stir and it will come right back to life!

Here are a few of our favorites meals made with our Homemade Basil Pesto:

...Grill some chicken breast, chop into bite-sized chunks, toss in pesto and serve on toothpicks as an appetizer, your guests will be pleased!

...Farfalle pasta, sun-dried tomatoes, sauteed garlic, chopped raw spinach and chick peas tossed in pesto - this is good hot or cold!

...Stir this pesto into your red sauce when making a lasagna, it will blow your mind!

...Schmear the pesto on this ciabatta bread with grilled chicken, mozzarella and tomato slices for a bangin' sammy!

...Spread the pesto on this pizza for an alternative to red sauce on your pizza!

I could go on but in the interest of everybody's time... I won't :)
