Baby Greens Caprese Salad with Pesto Lemonette Dressing



When I saw this recipe on The Londoner, I was pretty inspired!  As much as I love a caprese salad, I don't like to skip out on the greens that come with a traditional salad and I have a hard time feeling good about filling up on mozzarella.

This recipe solves all of my caprese salad "problems" :)  It has all of my favorite things wrapped up into one healthy and flavorful meal!  I decided to go for some extra nutritious kale and spinach for the leafy greens, but any leafy green will do.



Rinse these little beauties...


The dressing is an easy Pesto Lemonette Dressing -

1/3 c fresh squeezed lemon juice
3 tbsp Homemade Basil Pesto (recipe here)
3 tbsp olive oil
1 tsp pepper
1 tsp salt



Combine all your ingredients into a jar, close the lid tightly and shake the dickens out of it!




Slice your tomatoes, mozzarella and avocado into bite-sized goodness!  I like to directly salt the exposed insides of the tomato and directly pepper the mozzarella to bring out the flavors...



Top your greens with the avocado, cherry tomatoes, mozzarella and drizzle with your bright and zesty pesto lemonette, toss and enjoy!




I think next time I make this, I'm going to drizzle the mozzarella with some balsamic vinegar - I just love that combo! - and I'll add some red onions to the salad too!
