Baked Brie with Thyme, Shallots and Sun-dried Tomatoes
10 oz brie
2 tbsp chopped fresh thyme
1 shallot, chopped
5 sun-dried tomatoes, chopped
Fresh ground black pepper
Preheat your oven to 400 degree F.
Remove the rind from your brie with a chef's knife and then cube it. In a ramekin (or two if they are small), evenly distribute the first 4 ingredients and top with fresh ground black pepper.
Place your ramekin(s) on a cookie sheet and put it into your oven for 15 minutes. It should be bubbly and melted together. Give it a stir before you serve it up, and don't forget to warn your guests that the ramekin is HOT.
Once you turn off the oven, put your baguette in the still warm oven for a few minutes then slice and serve with your hot, gooey cheese dip!
*A few tips and thoughts on this simple recipe. If you prefer, you can soak your sun-dried tomatoes in water for 30 minutes to overnight, to bring them back to life and remove some of the oil. I've done this recipe both ways and I love it both ways, it is up to you!
Also, I sometimes will make this dip the night before and melt it in the oven ahead of time. Before guests arrive, I'll pop it back in for a quick warm up.
